Brown Rice Meatballs

Ingredients
1 cup cooked brown rice
1 tablespoon olive oil
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
2 cloves garlic, minced
1/8 teaspoon black pepper
2 tablespoons milk
2 eggs
1 pound ground beef
1 teaspoon of your favorite all-purpose seasoning
Instructions
In a small saucepan, heat olive oil over medium heat, add onion bell peppers and garlic and sauté until tender, about 5 to 7 minutes.
In a large bowl combine onion mixture, rice, seasoning, black pepper, milk, and eggs and combine with a large spoon.
Then add ground beef, and break into small pieces, and work gently but thoroughly with your hands to combine.
Form into meatballs about 1-2 inches in diameter and place on a sheet pan.
Bake in a preheated oven for 20 minutes until the meatballs are no longer pink in the center.
It’s ready to serve or cool and or freeze for later use.
Serve with your favorite sauce, such as Harissa Sauce.
