Broccoli Fried Rice (Vegetarian)
Ingredients
1 Tbsp. sesame oil, or your favorite cooking oil
1 garlic clove, minced
1 cup broccoli florets
4 oz. firm tofu, cubed
½ Tbsp. mirin* (optional)
1 Tbsp. low sodium soy sauce
½ cup Reveille Rice (white or brown)
1 cup water
1 Tbsp. chives, chopped
*You can substitute dry sherry for mirin or omit from the recipe.
Instructions
In a medium pan, heat oil on medium heat. Add tofu and garlic, cook for 2 minutes or until tofu is browned.
Add broccoli, cook for additional 5 minutes.
Add mirin (if using) and soy sauce to deglaze.
Add Reveille Rice and water and cook down until moisture is absorbed.
Garnish with chives.
